Garbanzo Pancakes

Ingredients (use vegan versions):

    1 cup Garbanzo Beans (chick peas), soaked overnight
    1/2 cup Peanut Butter
    1/4 cup Brown Sugar
    1 teaspoon salt
    2 teaspoon baking powder
    raisins (optional)

Directions:

Put all of the above in a blender. Add water until the mixture blends easily. When thoroughly blended, continue to add water until a very light, pourable consistency is reached. Cook pancakes on frying pan; no oil or butter necessary in my experience. A bit tricky to flip, but DELICIOUS!


now this is something ive been looking for;  the excellent nutrition of garbanzos, plus  the peanut butter that will draw my fussy eater !

Thanks for the Great unusual recipe.....haven't tried it yet but will real soon.  I have a recipe for a chocolate cake that you use garbanzo beans....its great too........

These pancakes are good when you grind the raw garbanzos into flour first and then add other ingredients.

Wonderful, turned out so perfect, my friends had no idea that it was not flour, I can't eat wheat, and these are so great, thank you thank you, buying expensive mixes at health store made vegan bread type items very rare treats but not any more...smiles.

This was really strange...at first, my sister and I tried making them in a non-stick (Teflon) pan, but for some reason this didn't work. Cast iron worked pretty nicely, though. Also, cooking these in Earth Balance=huge mess...you really don't need any kind of non-stick surface at all, because there's already so much oil in the peanut butter. My sister did say that they were a bit too "rich" for her, however--we did use the sugary kind of peanut butter in addition to the brown sugar, and will probably use less added sugar in the future. All in all, though, a great vegan/wheat-free recipe.  Thumbs Up
