pb@hpocia.sj.hp.comDecadent OatmealIngredients (use vegan versions): Two medium sized apples. I prefer Granny Smith or Pippins.
1-1/2 ounce dried apricot.
1-1/2 ounce dried raisin.
1 pint apple juice.
3 ounces slow-cooking oatmeal.
spices: Cinnamon, nutmeg, Lemon Rind, [Allspice]
Directions:I tried this one day when I had a bit of apple juice on hand. The only fat is from the oatmeal proper. If memory serves, there's 1 gm of fat per ounce of dry oatmeal. Feel free to substitute.
Core the apples, [peel if you insist] and chop. Chop the dried apricot. Combine the apples, apricot, raisins with the apple juice and heat to boiling. Let simmer a minute, then add the oatmeal. Cook for 5 minutes, then turn off the heat and cover for a couple of minutes. Serve over or with sliced banana.
This is an excellent recipe! I entered an extremely similar recipe in a cooking contest and I won first prize!

This recipe can be made even more nutritous by adding soft Silken tofu, and 1 Tablespoon Frontier Parfum a lamande (made with glycerin, natural bitter almond, but no alcohol), and, if necessary, 1 teaspoon of maple syrup. The tofu, which is added after cooking, makes the recipe taste like a custard dessert.

Variations: I used steel-cut oatmeal for more texture and, because I didn't have any apple juice on hand, I blended up a peach and a large handful of red grapes with some water. Served with a pat of margarine and maple syrup, this was not only decadent, but delicious.

Delicious! I just finishe'd a warm, sweet bowl-- the apricots really make it lovely. I used about half the apple juice, and only a fourth of an apple, but its still the best oatmeal recipe ive tried.
