gosselin@tartan.comEasy Pancake/Waffle RecipeIngredients (use vegan versions): 2 Cups whole wheat flour (bread flour, not pastry flour)
2 tsp baking powder
2 Tbs apple sauce
1 Tbs light unsulphured molasses
1 Cup low fat soy milk (I use Edensoy vanilla, which is about 18% fat)
1 Cup apple juice
Directions:Add all ingrediants in the order given and then mix. Cook howe'ver you cook pancakes and waffles (I have not been able to get by without a cooking spray for waffles). I make my pancakes big (coaster sized) and put in fresh fruit when I have it handy. I pour my pancake and add the fruit to the cake on the griddle.
Oh, yeah--top with real maple syrup.
I'd add a little salt to that, because I don't have a problem with a little salt in things. I'd also try Silk vanilla soy milk, with maybe a little of their creamer, maybe a tablespoon of olive oil, because I'm not really Spartan about fats, as long as they're non-hydrogenated and moderate. And I wonder what a little potato starch would do for that... Hmmm. Stop typing and make pancakes. Yes.

hi there, i just tried this e-z waffle mix, and it worked great! i substituted more soy beverage for juice, jam for apple sauce, and baking soad for baking powder. this was my first ever attempt at making waffles, much less vegan waffles, and my friend and i were joyous! howe'ver, next time, i will seek out juice, as they were a bit thick, though delicious all the same. ive always had a green thumb, and since becoming vegan 5 years ago, have become a great vegan cook as well. thanks for sharing your recipe! bright blessings, josh mars

this recipe was not very good. i did everything exactly as the recipe said and the pancakes were really bad. i cook a lot and nothing has every tasted so bad.

I made these this morning and they rocked!!! The only thing I changed was the apple sauce -- I thought I had some and it turns out I didn't, so I used canned pumpkin instead. I took your suggestion and put fruit (blueberries) in the batter right on the grill. These are wonderful, hearty, delicious pancakes and will be a favorite for a long time.

i suck at making pancakes. they were ever so delicious anyway. must aquire skills of the pancake making variety. when they are made not raw on the inside and burnt on the outside they are the most delicious thing in the world. not bad with pretend lite maple syrup product and crappy butter substitute made with nothing but oily stuff.

I tried these waffles,they were OK.They were not really cooked inside so I add egg replacer for 3 eggs,also little bit of canola oil and also grated lemon peel from 1 lemon which gave it very nice taste.
