Sandi's Fat Free Burrito Casserole

Ingredients (use vegan versions):

    fat free flour tortillas
    fat free refried beans (large can)
    fat free vegan cheese
    salsa

Directions:

Step 1:  In a caserole dish, start with a layer of flour torillas, Step 2:  on top of torillas spread the refried beans, Step 3:  sprinkle cheese and salsa on top of beans.

Continue making layers following the above steps.  End the top layer with cheese and salsa.

Bake at 350 degrees for 30 minutes.

Serves: 4-6

Preparation time: 10 min

I think I will make this without the cheese. Instead of cheese... maybe try lite tofu? I think I will crumble some on it! Awesome idea! This would probably be good with fresh salsa and tons of "sour cream" made with lite silken tofu.

This would probably be amazing with whole wheat tortillas, and maybe some hot peppers and other vegetables layered in with the beans
