1 small can chopped green chiles
1 jar green tomatillo salsa (trader joes is good for Californians, or Arriba, or whatever)
1 package regular tofu, drained
2 cans black beans
desired condiments (chopped veggies, salsa, guacamole, ...)
flour tortillas
Directions:Serves: 4 to 6.
Preparation time: 15 min or less.
This is so easy it is embarassing. Fling the corn into a large saucepan. Cook over med heat for a bit until it thaws. Add the chiles (more or less depending on how spicy you like it), drained black beans, salsa, and mashed tofu. Cook and heat through. Serve on warmed flour tortillas. I make this for my students at Guilford College.
Hi! I thought this was a little bland the original way, so I added cumin, chili powder, cayanne pepper, etc. Spiced it up a lot. It was good and very easy!

I use the same ingredients for enchiladas. Just spoon the mixture into softened corn tortillas, roll it up and place it seam side down into glass dish. Pour enchilada sauce over the top, maybe a little rotel and vegan cheddar. Bake at 350 til bubbly! I, too, add spices - cumin is good in this.
