Head of brocolli
handful of mushrooms
large onion
marmite or other yeast extract but marmite is best
tomato puree
flour
Directions:Sweat onion and mushrooms in a little olive oil. Boil brocolli in just enough water to cover it until it is just tender. Dont drain the water, but over a low heat add a couple of tablespoons of the tomato puree and marmite, the onions and mushrooms and stir well. Then add the flour until it becomes a thick stew. Pour into pie dish and cover with pastry. Bake until pastry is golden. It is very nutritious due to the marmite and brocolli, and has a relly rich gravy like taste.
Serves: 4.
Preparation time: 45 mins.
The receipe sounds delicious! I absolutely love pies like these, but I have a question; will the stuffing in the pie be stiff enough, or isn`t it supposed to be? fridge.

This may be a dumb question, but do you steam the head of brocoli whole, or cut it up? I'm guessing that you would cut it up. Sounds very good.

I did not like this dish (neither did my housemates) There was just something that didn't taste right (the Marmite?) and making puff pastry is a time consuming project.

I thought this was delicious! I used nutritional yeast instead of marmite and we all just loved it. It was so easy to make and the taste was very warm and gravy-like. Comfort food!

I'm guessing puff pastry can be made with vegan margarine, too. Marmite is a yeast extractive, looking like a dark, thick paste and its a British thing. I don't know if its sold elsewhere but I'm pretty sure its not sold in America. You can try yeast flakes instead, although they're not as strong.

I've found marmite at my local food coop and at various whole foods. At first I didn't like it, but now I love it. I guess its an aquired taste. Sometimes I just have it on bread alone or with avocado its delicious.
