melani69@mail.idt.netMango LassiIngredients (use vegan versions): 1 cup plain soy yogurt
2 cups water
1 teaspoon rosewater (optional)
6 tablespoon sugar
8 tablespoon mango pulp (best & easiest if canned)
Directions:Place all ingredients in a blender and blend for 30-60 seconds. For a thicker lassi, add more yogurt and a bit more mango. I never concern myself with exact measures. Also, many people like to play with the amount of vegan sugar and mango to vary the sweetness- that is always good, but try it this way first.
Serves: 2 & 1/2
Preparation time: 2 minutes
what exactly is rosewater?

The Mango Lassi is delicious! & the rosewater adds a lot to the taste. For my husband, who likes cold drinks I add a cup of crushed ice. Its like a smoothie, he loves it!

Rosewater is a a water solution made from rose leaves .This water has a fragrance as that of rose. You can also use rose esscense instead of rose water. You can get this two in any of the Indian or Pakistani or Afghanistani stores.

Using rose essence over rose water isn't advisable IMO as most essences are synthetic. While I buy my mango lassi at the local Indian restaurant with rose water in it, when I make it at home I don't trouble myself with the rose water and to be frank, I taste no real difference. So don't fret if you don't feel like buying/making rose water as it won't compromise the recipe. The recipe I like best consists of 1 ripe mango, 1 cup (8oz) plain yogurt, 1/2 cup very cold water, and sometimes 2Tbsp. sugar. Blend well and enjoy chilled. Yields one tall glass (which will fill you up so you may want split into two servings and seve in smaller tumblers).

This was very yummy though I had to half the recipe. I would suggest a little less than half the rose water if you half the recipe. Very yummy!

Rosewater is never used in a mango lassi in India. What is used is powdered cardamom seed (1 cardamom pod per glass) Also do not use water to dilute the lassi as it should be thick and rich. Use soy/rice milk instead.
