Cranberry Juice

Ingredients (use vegan versions):

    1 lb (1/2 kg) cranberries
    5 cups (1 1/4) liters water
    salt
    2 or 3 orange slices (optional)
    1/2 cup (125 ml) sugar

Directions:

Wash the cranberries and put them into a nonreactive saucepan with the water, a pinch of salt and if you wish, the orange slices.  Cook over medium heat until all the berries burst -- about 10 minutes.

Pour the fruit and liquid into a cheesecloth-lined sieve.  Strain the juice to the saucepan, add the vegan sugar and boil for two or three minutes.  Taste and add more vegan sugar if it is needed.  Cool and chill the juice before serving.


thanks, always looking for alternatives to what's on the store shelves.    So now i won't have to depend on ocean Spray for my cranjuice !

Try substituting the vegan sugar withhoney, much healthier. Replace any amount of vegan sugar with half the amount of honey, example  one cup of vegan sugar equals half a cup of honey.

I registered with this site just to say thank you for this recipe.  Just this week a member of the family was found to be diabetic and put on the Atkins diet, (so realistically, every member of the family has become diabetic and on the Atkins diet.) As I was stewing and mixing, I was tasting and not very pleased with the warm mixture.  It chilled all night, and I when I tasted it today, it was wonderful.  Overnight it had clarified and was very appealing to the sight as well.  Again, thank you so much.  I could not imagine a diet with cranberry juice.

Well, its in the fridge right now, still warm.  I tasted it, and it tastes fabulous.  I left out the salt, and didn't use the orange slices.  Very good, and very easy.  I never cook, and this just looked so easy I had to do it. Smiley

also i like to drink pure cranberry concentrate with a couple squirts of stevia. stevia is most definitely heaven sent. i love it. i recommend it to everyone, especially diabetics.

To:kaitebrown You mentioned Stevia, did you make this recipe and used only Stevia? If so how much for this recipe?  I am curious as to making this recipe without the Vegan Sugar but using Stevia because my friend is now selling Stevia.
