maherle@mail.auburn.eduGinger LemonadeIngredients (use vegan versions): Fresh ginger
Juice of 3 lemons
1/2 cup maple syrup (or sweetener of your choice)
2 quarts water
Directions:Place water on the stove to boil. Peel a good 2-3 inch slice of ginger (depending on how you like ginger). Grate the ginger over a fine mesh grater. Squeeze the freshly grated pulp to remove the juice. Discard dry pulp. When water boils, add the lemon and ginger juice. Let steep for 20 minutes, then add the syrup. This is very refreshing.

Oh! I've been getting tired of plain lemonade! I tried adding mint, but it didn't work. How would I do this with frozen concentrate lemonade and minced, canned ginger?

If you want to make this using lemonade concentrate, try this. Grate fresh ginger into a quart jar (about 2-3 Tbls, depending on how strong you want it) Pour in boiling water and let steep for 10 min. Strain off the liquid, discard the grated ginger. Be sure not to steep any longer than 10 minutes...it gets spicy! Use this water to make your lemonade, adjusting amount to taste. Ginger tea is amazing for indegestion and even fevers too. To your health!!

I think I'll try a 1/4 cup of cranberry juice for something a little different...
