Protein-Packed RiceIngredients (use vegan versions): 8 oz. Great Northern Beans
1 8 oz. can peas
2 tablespoons margarine
1 cup long-grain rice
1. cup water
Salt and pepper to taste
Directions:Bring water to a boil. Add rice and margarine; stir, boiling for 1 minute. Add beans and peas and boil for one minute more. Season to taste. Simmer until water is absorbed.
Serves: 2
Preparation time: 25 min

Great Northern beans are small white beans. I'm not too fond of them, though. I usually use whatever beans I have for a recipe. Joe

I made this a few days after I made that last post, and its great!! I used corn instead of peas because I didn't have any. I thought that it would be really gross, and that I'd have to use it in chili or somthing, but the sweet vegetable (peas or corn) really add somthing to it!! I used a teeny bit of dry mustard, some marjoram, and some italian seasoning for the spices. I reccomend this recipe!

I tried it with black beans as I didn't know what great northern beans are...I like this combo! I doubt though that its for everyone

I was looking for a recipe to use up some canned peas in my fridge. This was perfect, because I've had a can of great Northern beans in my cabinet for ages--I don't even know why I have them. Anyway, I made the recipe using thyme, oregano, basil, and pepper, and it was great! I don't know if those spices are supposed to go together but it worked for me.
