Corn, Rice and TofuIngredients (use vegan versions): 1/2 cup cooked rice (any kind)
1/2 cup cubed tofu
1/3 cup cut corn
soy sauce (to taste)
Directions:Add all ingredients to a bowl. Microwave on high for about 2-3 minutes.
Serves: 1
Preparation time: 5 minutes
I make something like this, but cook the rice with veggie broth or taco seasoning to add flavour, and add a can of black beans to make it more balanced. Its good plain, and also with salsa.

Rice and beans make a complete protein. Tofu is complete in itself.
