Spinach, tomato and tofu scramble

Ingredients (use vegan versions):

    1 lb firm tofu
    spinach (lots or a little, depends on taste)
    2 large ripe tomatoes
    fresh garlic to taste
    splash of Braggs Liquid Aminos
    juice of one fresh lemon
    vegetable oil
    salt and pepper to tasteheat oil

Directions:

Heat oil in a large skillet.  When hot, add tomatoes and garlic, tossing frequently to avoid scorching.  Add spinach and Braggs.  Reduce heat and add tofu (cut into pieces).  Cover.  Allow to simmer for approximately ten minutes.  Stir regularly.  When ingredients are cooked to your liking, add salt, pepper, and lemon juice.  Serve.

VARIATION:  You can marinate the tofu in a mixture of liquid aminos (or tamari), garlic juice and a splash of sesame oil for an hour before using.  Dish should have a distinct oriental flair; include any of your favorite asian spices.

Preparation time: 15-20 min


Would like to try this recipe.  What is Braggs Aminos?  Never heard of if in Canada; but then again I haven't looked.

I have seen other recipes where Braggs amino and soy sauce are used interchangeably.  It looks like it would work in this recipe.

Braggs Liquid Aminos is a much healthier version of Soy sauce.It has no preservatives, no colouring agents, no additives, no alcohol and no chemicals. The sodium in it is natural occuring (No added salt, yeah!!!) Available at most health food stores and Co-ops.  You can write them for more recipes (and maybe a list of places near you that carry their products (the have many different health food products)). I just tried this recipe and I'm  sooooooo impressed!  Its not every day that I can find a recipe where I already have all the ingredients.  Haha, and with my poor cooking skills, its even harder to find one that I can make.  This is really good and I highly suggest trying it out!

Mmm, I loved this. I am not a fan of Braggs so I used low-sodium (kinda an oxymoron, I know) soy sauce. I also used olive oil instead of vegetable oil.  The taste is exccellent. My scramble had more of a gazpacho/soupy texture. Next time I will cook the mixture uncovered for a really hearty, less liquidy mixture. The flavor was excellent. I will also add two heads of fresh spinach...All around FAB recipe Smiley

Great recipe. I added sliced mushrooms before the tomatoes and added chopped cilantro at the end. I used Yoshimi sauce (you can buy it at Sams Club), which is an oriental sauce. The cilantro makes a good combination with the lemmon juice. Very tasty. Even my meat eating husband liked it.

This was an easy, delicious recipe!  My husband loved it, but my two year still prefers his tofu plain.  Thanks for a great dinner idea.  PS  We thought next time we would pour ours over some pasta noodles!

I tried this last night and it was DELICIOUS!  Particularly with the marinade.  I've never had my tofu come out so flavorful.  Thank you, I'll be sure to cook this one again!

I didn't use tomatoes or salt and pepper.

Instead of Bragg's I used tamari sauce.  (see above comments for ex.)

I added fresh ginger and several splashes of sesame seed oil with hot red chili peppers.

nothing special but tasty AND easy AND fast. Smiley
