1 large onion
1 large zucchini
1 can of stewed tomatoes
salt and pepper (to your own taste)
a dash of paprika
2-3 tablespoon margarine
Directions:Melt margarine in a large pot. Slice all vegetables and put in pot, get the margarine on em good then add stewed tomatoes and salt, pepper and paprika. Allow to simmer for 15-20 minutes, depending on how crunchy you like the veggies!
Serves: about 5.
Preparation time: 25 minutes.

A TASTY -SOOO TASTY ADDITION IS TO OMIT BUTTER AND STEAM FRY EGGPLANT SLICES, ZUCHINNI SLICES, ONION SLICES, RED PEPPER SLICES AND MUSHROOM SLICES IN A NONSTICK PAN WITH MINIMAL WATER. COOK TILL TENDER CRISP AND ADD 1/2 CUP SALSA,2-3 TABLESPOONS BALSAMIC VINEGAR AND 2 TABLESPOONS DIJON OR SPICY BROWN MUSTARD AND A TESPOON OF BROWN SUGAR. THIS IS TRULY A GREAT COMBINATION OF TASTE. I HAVE EVEN ADDED CRUSHED RED PEPPER FLAKES FOR A FIERY DISH.

I fried up the vegetables in some light olive oil instead of margarine and added some frozen mixed veggies. I had the leftovers the next day over rice. Yum Yum!

I made this but added a can of Rotel tomatos (spicy) and a little tomato paste to thicken it. It was really good served over rice.

My husband just called me at my office to say he's having Kentucky Fried Chicken for Dinner (Yuk!) I'm having this Ratatouille over Brown Rice. Sounds so delicious. I can't wait till dinner time.

Hi, made the above, added the eggplant of course. Then added french mustard, soya source, garlic and pepper, thyme and olive oil. I firstly fried all the vege before adding chopped tomatos.
