Quick and Easy Beans and RiceIngredients (use vegan versions): 1 can seasoned field peas with snaps (I prefer Glory Foods, but any will do)
1 cup uncooked rice (instant or quick variety)
Directions:Cook the rice according to the instructions. Heat the peas while the rice is cooking. Drain the rice, mix the two together. Easy as that. No extra spices are needed, but you might want to add a pinch of salt. Seasoned black-eyed peas can also be used.
Serves: 2-3.
Preparation time: 10-15 min..
Nutrition Information: I'm not sure of the nutritional information, but it can be found on box of rice and the can of beans..
Glory Foods seasons all its beans, peas, etc. with PORK!! I am sure of this not only because I've read the label in the store, but because my mom used to cook with Glory Foods b4 they became popular--she lives in the town where the company is headquartered. So if you are vegetarian, buy regular canned beans or unseasoned Glory beans and season them yourself. Otherwise you will surely be consuming pork and other meaty stuff with your pre-seasoned beans. Just a word to the wise....

I've found that some orange juice dumped in with the beans while cooking is good... I use black beans from a can but rinse and drain them to wash away all that gross sodium. ~Liz
