shernofs@cadvision.comJalapeno RiceIngredients (use vegan versions): 1 red pepper, chopped
1 green pepper, chopped
2 cloves garlic, chopped
1 medium onion, chopped
2 teaspoon chili powder
2 jalapeno peppers, chopped
2 cups rice
1 14-oz can stewed tomatos
1 14-oz can kidney beans
1/2 cup salsa
1 14-oz can garbanzo beans
Directions:In a large pot, saute chopped vegetables and garlic until golden. Add chili powder and stir. Then add the rest of the ingredients and simmer on low until all the liquid is absorbed. This should take about 50-60 minutes.
Serves: 8
Preparation time: 1.5 hours
This was SO FANTASTIC!! I guess it was pretty spicy cuz it was too hot for my husband. Also, it makes A TON!! Two cups of uncooked rice would normally have six cups of liquid to cook in, so I was not surprised when I needed to add a couple cups of broth. At the end I tossd in the bunch of cilantro that was hanging around my fridge and that was a terrific addition!

Thanks for the wonderful rice dish. I gave this recipe to my girlfriend before I had a chance to try it and she made it last night and called to say it was GREAT. She did add some cumin and cayenne pepper to add even more pizzazz.

I am sad to say that I did not have much luck with this dish, I had it on the stove for almost two hours and got tired of adding water to try and soften the rice, this turned out to be a waste of money and time for me....
