Mexican RiceIngredients (use vegan versions): 1 cup of regular rice
2 cups of hot water
1/4 cup minced onion
1 minced garlic clove
1/4 cup peas
1/4 cup squared carrots
1/4 cup corn grains
1 small can tomato sauce
coriander leaves (
1/2 oz corn oil (to fry)
salt to taste
Directions:In a pan, fry at high temperature the rice with the onion and the garlic until gold. Drain the oil and continue cooking at medium temperature. Add the tomato sauce and the vegetables.
Give a turn and add the hot water and the coriander (cilantro), bring temperature to low, add the salt.
Cover and let it stand for aprox. 20 minutes until tender.
Serves: 4
Preparation time: 30 min
very tasty! (and easy to make). you should try it with whole (brown) rice.

Thank you so much for that recipe. It was delicious. I've never made rice like that before so was very nervous, but it turned out fantastic. I had the heat down too low - but I turned it up a little and cooked it for an extra ten minutes and it worked out wonderfully. I was a bit worried about the tomato sauce - I thought maybe that means something differnt to those not in Australia - like tomato paste - but I used tomato sauce 1/4 cup and it like I said - delicious. Thanks!
