Cranberry-Rice Salad

Ingredients (use vegan versions):

    1 cup long grain white rice
    1/4 cup. wild rice
    1/2 cup dried cranberries
    1/4 cup chopped parsley
    1/4 teaspoon freshly ground pepper
    2 tablespoon olive oil
    1/4 cup green onions diced
    1/2 teaspoon ground cloves
    salt to taste

Directions:

Cook the rice to package instructions.  Fluff rice and add all other ingredients.  This recipe is super easy and makes a great snack or side dish.  Add your own ingredients to make a special variety that is you and name it after yourself!  Have fun with it.  Enjoy!     Melissa Brown from TEXAS   yee ha!

This sounds like an extremly good recipie...  i have always been a big cranberry fan myself...  can't wait to try it

How would an almond mayo dressing taste on this?  I think perhaps I would add some chopped pecans and  grated carrot, too, for additional color and texture.
