Rice with a TwistIngredients (use vegan versions): 1 Large bag of Mahatma Yellow Saffron Rice
1 Bunch of Celantro
1 Yellow Onion
1 LARGE Tomato
1-2 Tblsp. crushed jar garlic (or more to taste)
Salt to taste
Pepper to taste
1 Half of each red and yellow pepper
Olive Oil
Directions:Take 7-10 strands of Celantro mince Take 1/2 Onion mince Take Tomato cube small Take Peppers cube small Heat medium amount of oil in large pan place prepared veggies in pan and sear, once seared drain excess oil leaving enough to swish around pan. Set aside.
Prepare Rice as directions advise(I allways use the micro) once Rice is done mix Veggies and Rice all together and makes a very good main or side dish.
Serves: 4
Preparation time: 35 MINS
I served this dish during our wonderful Chistmas meal. Everyone loved it. After reading the recipe a third time, I realized that I forgot the garlic. Well its great without it. Maybe next time I will use the garlic. Thanks
