2 carrots, grated
1 med onion, chop fine
3-4 clove garlic, minced fine
2 stalk celery, chopped fine-- OR-- 2 tablespoon dry celery flakes
2 tablespoon oil (optional)
1/2 cup raw cashews
1 tablespoon arrowroot powder (or cornstarch)
4 cup boiling water
3/4 - 1 teaspoon sea salt
2 1/2 qt covered casserole dish
Directions:Process cashews and arrowroot to a fine powder in food processor. Combine all ingredients in casserole dish. Stir to evenly mix. Cover and bake at 350 degrees for 1 1/4 hr or till rice is done. Check after 50 minutes and stir in 1/4 - 1/2 c. additional boiling water if needed.
Ideas: Exchange 1/4 c. brown rice for equal amount of wild rice
Serves: 4-6
Preparation time: 20 min?
EASY! I didn't need to add water. I think it didn't need quite so much cooking time. It does need a little more salt or some other spice. My spouse thought it was really good!
