My dads best Indian Basmati Rice

Ingredients (use vegan versions):

    1 cup long grain BASMATI rice
    2 cups cold water
    1 tablespoon oil (preferably canola)
    1 teaspoon salt
    1 teaspoon cumin seeds
    1 small onion, chopped (about 1/4 cup)

Directions:

In a large saucepan heat the oil over medium heat until hot.  Add the cumin seeds and onion and fry until the onion becomes translucent (do not let it brown).  Add the rice and fry for another 2 minutes, stirring to coat and cook the rice.

Gradually add the cold water, cover and bring to a boil.  Let boil for approximately 1 1/2 minutes then reduce heat to low (simmer).  Let the rice cook, covered, until done (about 10 minutes.

Serves: 4

Preparation time: 30 minutes


Mmm sounds yummy. Easy too. I'm gonna try this with chunks of steamed sweet potato.

Basmati needs to be   soaked before cooking,giving a light fluffy rice and shorter cooking time.Add course black pepper melted butter and  salt and its a meal on its own.
