K & D Quick Faux Indian Rice SaladIngredients (use vegan versions): 2 cups uncooked brown basmati rice (long grained brown rice would work too)
1 16 ounce can black beans, drained
1 4 ounce can mild chilis (or 4 fresh ones, degree of heat to your liking)
2 Tablespoons Pataks Curry Paste (available at Asian markets or gourmet food stores)
1 Tablespoon cumin
1 Tablespoon coriander
1/2 Tablespoon ground ginger (fresh would also be good)
1 cup raisins
1 or 2 cloves garlic
Fresh
cilantroDirections:Cook the rice. Chop the chilis, garlic and
cilantro. Mix everything into the warm cooked rice. Chill for an hour or two. Eat. Enjoy.
(We deliberately went light on the garlic and chilis because of our audience, if we were making it just for ourselves we probably would have used hot chilis and more garlic and curry paste.)

I tried it, added extra Pataks, extra hot chiles, extra garlic. My engineering group in St. Louis loved it, that is, those who would try it. Next time I'll be using Golden raisins. Andren
