krw3@columbia.eduClean-out-the-fridge PilafIngredients (use vegan versions): 2 cup brown basmati rice
4 cup water
1/3 lb mushrooms, chopped
1/2 of a green pepper, diced
1/2 of a red pepper, diced
1 onion, chopped
2 plum tomatos, chopped
salt to taste
Directions:Throw everything in a pot, bring to a boil, cover and simmer for 45 minutes until the rice is cooked.
