char@netdoor.comGreek Pasta SaladIngredients (use vegan versions): 8 oz. salad rotini, cooked and drained
1/4 cup vinegar
1 tablespoon dried parsley
1 tablespoon dried oregano
1 clove minced garlic
1/2 tablespoon salt
1/4 tablespoon pepper
1/4 cup oil
1 cucumber, diced
1/2 cup ripe pitted olives, halved
1/2 cup sliced green onions
Directions:Mix vinegar, spices and oil. Add to pasta. Mix in vegetables. Chill. Serve with tomato wedges and dairy free feta cheese equivalent (optional).
Serves: 4
Preparation time: 30 minutes
DELICIOUS!!!! Brings back memories of my first affair!!!! mmmmmmmm!!!! Great With Dry vegan red wine!!!!

This stuff is GREAT! Hint: I made mine with whole-wheat elbow macaroni. To get rid of the strong taste of the whole-wheat pasta, I put the pasta in a pot with water, let it come to a voil, then drained it. Then added new hot water, and cooked it as normal. When it was done cooking, I drained it, and rinsed the pasta in running hot tap water. Wonderful!
