cdg3k@virginia.eduTofu Mock Chicken SaladIngredients (use vegan versions): block of frozen tofu, thawed and squeezed out
chopped celery
chopped onion
chopped pickles
vegan mayonnaise (I use egg-free)
salt and pepper to taste
poultry seasoning (found in grocery store; its a combination of sage, thyme, marjorom, etc.)
Directions:Tear tofu into small shredded pieces. Add crunchy things (ie, celery, onions, pickles) as desired. Moisten with Mayonnaise to hold mitxture together. Season to taste with salt, pepper, poultry seasoning. Tamari can also be added.
Serve as dip or as a sandwich filling.
This is a very forgiving receipe. Use your imagination and have fun.
Preparation time: 10 minutes.

I think this would taste better if you cook the tofu first. As much as I love tofu, even I would never eat it raw from the fridge of freezer with no flavor. Yuch. I like to lightly fry in a little canola or vegetable oil, tastes great.

You have probably never tasted tofu raw! You should not make comments about something you don't know about.

This is a great reipe, I like to add stuff to it. As for the person who said they would cook the tofu first..that's not hte point of this. The frozen tofu has meaty texture similiar to that of chicken, and since tofu so readily absorbs flavors in marinades, it takes in the flavor of this salad. Just try it before you judge it.

Raw tofu has a subtle yet pleasing flava. It neednt be fried to be palletable.

sounds great! I make a similar recipe using steamed, cubed tempeh instead of the frozen tofu...its my favorite, actually, I had some for lunch today! I know that frozen tofu gets a chewier texture than fresh, I'll have to give it a try too! I'd recommend both the squirt of tamari and a squirt of mustard to the tofu mayo as well

yummmm. i just made this to have for lunch on a sandwich tomorrow, its perfect for that mayonnaisey-salad-on-bread craving ive had. i used veganaise that i was trying to use up, 2 celery stalks, a carrot, half of a small onion, mustard, a splash of shoyu, salt, pepper, and plenty of fresh parsley and fresh thyme. p.s.--i loooooove tofu, and i do eat it straight out of the fridge on occasion. : )

i agree with najmah about raw tofu being bland, but this recipe requires it to be mixed with many flavourful things that will cover that nicely, and Daoona, im sure Najmah has tried it raw adn that's how she knows she doesn't like it
