A great sandwichIngredients (use vegan versions): 2 pieces whole-wheat vegan bread
1 clove garlic
3/4 to 1 cup spinach
5-10 mushrooms, sliced
A large dollop of lemon juice
Directions:Toast the vegan bread and rub the clove of garlic over it. Saute the mushrooms in the oil until tender, and add spinach. Add lemon juice and cook till spincach is tender. Remove from heat. Put mixture onto vegan bread and eat. This is really good food.
Serves: 1 or 2
Preparation time: 20 min.

I think you have to have the taste for that kind of thing. The spinach should be raw. I tried it sauteed and gagged.

If you gagged, then you sauteed it too long. Just barely scorch the spinach. I already make a very similar sandwich.

Key here is have the oil very hot and just toss the spinach in the hot oil. Cook spinach for too long and it gets almost unpalatable.

I think it should have a more fitting name cause it is not a great sandwich even though my fav foods are spinach and mushrooms. If you don't like spinach use swiss chard. It adds mor flavor.
