Hot Vegetable Subs

Ingredients (use vegan versions):

    1 Green and 1 Red (nonhot) Pepper
    1-2 large onions
    1 Medium package mushrooms
    Oil for frying, or water to steam-stir
    Jar of hot pepper relish (usually found in Mexican or Jewish sections at the grocery store)
    Small sub rolls
    1-3 cloves garlic
    Soy cheese-provelone style (optional)

Directions:

Clean, peel, seed all veggies. Place in pan and either fry with a little oil or add small amount of water and steam-stir until they are soft. Add a small amount of hot peppr relish at the end of cooking, or to taste. (If you can't find hot pepper relish then whole canned (or fresh) hot peppers chopped can be used-although I find that the relish gives the best end product).

Cut sub rolls open and toast, then rub with cut garlic.

To serve, place veggies on cut sub roll and top with soy cheese. Place in broiler until cheese melts.

This is an excellent way to reap the benefits of hot peppers-great for people with circulation and heart problems, and oh so good!

Serves: Depends on what ingredients you add

Preparation time: 20  minutes


Its not a bad sandwich, I love experimenting with recipes and making simple foods such as this.
