How can you call this low fat? I thought avocados were very fatty/oil based?

Avocado is very fatty, howe'ver, it is a natural fat that your body can digest, and use or discard. The processed fats are the ones that need to be discarded from our diets, the processing changes their molecular structure which makes them less than digestible. Enjoy your avocado and use one of Wish-bones fat free Italian dressings!

gillian, i believe that its a trade- off: You get the great taste and plant nutrition of the avocado, you just don't need to overdo. Maybe a high proportion of its calories come from fat, but, again-- everything in moderation !! Meanwhile I'm not sure if this qualifies as exactly low fat, but, Susanne- great recipe, ill be using it.

I haven't tried this, but there seems to be so much concern about fat. I, for one, am having a problem about not having enough fat. Everything vegan and vegetarian is low fat and that bothers me. I don't always want to have something with 0% fat, its just not enough. To find out that something has a higher fat content is a relief to me.
