Red Beans and Avocado Salad

Ingredients (use vegan versions):

    4-6 whole wheat flour tortillas
    3/4 cup red kidney beans, cooked
    4 leaves romaine lettuce, sliced (or other greens like spinach, red lettuce, etc...)
    1 avocado, sliced
    1 small ripe tomato, diced
    your favorite homemade vinaigrette or a combination of
    oil, vegan red wine vinegar, shallots (or garlic), paprika,
    mustard powder and salt and pepper

Directions:

Mix all the ingredients of the salad. Roll the tortillas is cone, hold them with a toothpick and fill them with the salad.

Serves: 2

Preparation time: 15 minutes


This is a very good recipe.  We didn't use any alcohol, but it was still very delicious with a vinagrette dressing.

This was just okay for me...maybe it was the dressing I used (I made a homemade dressing of olive oil, lemon juice, dry mustard, salt, and pepper). I also didn't have a tomato to use, but everything else, I followed as directed. There just wasn't enough "stuff" in the wrap to make it filling. I ate one for dinner last night and was hungry again a few hours later  Embarrassed Thanks for the idea, though, because I think it's a good start...I just need to add more to it.

this was so awesome!!! Delicious!! I made it for my sweet old granny to take over to her house while my papa is on a short trip, and she loved it! She's a picky lady, as am i, so .... it's totally a compliment.

really rad summer lunch- i used chick peas instead and added lemon cilantro and green onions minus the tomato...pretty good.
