2 slices tomato
3 slices cucumber
1/4 cup romaine lettuce
3 slices avocado
1/4 cup bean sprouts
2 slices onion -preferably red or purple
2-4 olives
2-4 toothpicks
pickle
Directions:1.Slice croissant
2.Broil croissant halves 2-5 min, or until golden
3.Meanwhile slice veggies (I've found it easiest to get veggies from supermarket salad bar than to buy whole vegetables, slice them, and just use some of the slices)
4. Remove croissant from oven
5. Pile the veggies on the sandwich: lettuce on bottom, tomato,avocado,cucumber, onion, sprouts on top
6. Top with other croissant half. Hold sandwich together in 1 or two places by sticking a toothpick pierced with an olive. Serve pickle on side.
Serves: 1
Preparation time: 15 min
This is delicious, I always make these with white rolls with a crust never tried it on croissants. Try to put some mayonaise on one side and mustard on the other, great!! But then again maybe not on croissants, the taste is already very buttery. I'll try your recepie tomorrow, was already wondering wat to have for lunch.. Thanks! Moniqeu

And I thought I was the only one to use the prepared veggies at the salad bar for a quick fix!! ...Of course, I hear there is a chemical sprinkled on the veggies to keep em fresh.. Oh well!

Do you know where one could find or bake vegan croissants? I loved them, but I've never found any that are vegan, and the last time I made them, it took forever! (I live in the D.C. area if people actually know of a bakery that makes vegan croissants)

Nima-toad, I don't know if they make croissants, but there is a vegan bakery on 18th St (cross street is S St, I think) near Dupont Circle-- its called Sticky Fingers. Other than that, my fiances mom makes lacto-croissants, so you'd just need to find a recipe and modify it with Smart Balance or something.

Hi Sharway, Thanks for the message. I've been to Sticky Fingers many times, and while they make the best cinnamon rolls ever, they, alas alack, do not make croissants. Sigh. Thanks much though :-). Nima

I could be wrong (because it sounds crazy) but someone commented on another recipe and said that regular old Pilsbury crescent rolls are vegan.
