Curry Tofu Sandwich

Ingredients (use vegan versions):

    Olive Oil (or any healthy oil)
    Soy Sauce
    Curry Powder
    Multi-Grain Organic bread
    Dijon mustard
    Tofu
    Bean Sprouts
    Tomatos
    Shredded Carrots
    Cucumbers
    Optional: Lettuce

Directions:

Pour curry powder onto a plate, to measure. Take 2 slices of tofu, 1/4 inch each, cut along the blocks long side, and then dip the tofu on all sides into the curry plate, until the tofu is completely covered in curry.  Turn the skillet on medium fire.  Pour in the oil (a bit more than a saute); wait until oil has warmed.

Then place both pieces of curried tofu into skillet and let cook for a few minutes; watch careful to make sure it doesn't burn; meanwhile cut and shred the carrots; chop the tomateos; chop cucumbers.

After a few minutes of the tofu cooking, flip them both; then immediately pour a few table spoons of soy sauce onto the the tofu.

You should see smoke; always watch the tofu; cook it slowly and move it around.

Toast the vegan bread.

Place dijon mustard on one side of toasted vegan bread.

Place sprouts, tomatos, cucumbers, and any other veggies onto one side of the vegan bread.

Then when tofu is ready (should be a toughish consistency), place tofu onto other vegan bread; bring both sides together and cut in half perpendicular to the 2 pieces of tofu.

Enjoy.

Serves: 1

Preparation time: 20 minutes

My favourite sandwich Smiley  I usually have it with tomato, spinach, green pepper, and vegenaise.  Reminds me a bit of BLTs sometimes...

oooooooooohh it was very good, but i used a whole wheat wrap instead, and i used sauted vegetables for the inside like peppers, broccoli and mushrooms, with an oil and vinegar mustard concoction, just amazing curry tofu!

Very Yummy ! I made tofu as directed in recipe and I kept veggies on the side. I sauted green pepper, cut carrots and celery and pour fat free honey mustard on them. It was just great ! Definetly will make again

this is delicious! I like how fast and flexible it is. I just had yellow mustard and teriyaki sauce and they worked fine. everyone loved it. my friend hates bread, so I sliced the tofu in strips and made her a salad with it with tahini-mustard dressing. I'll be making this all the time.

regarding other comments: wraps and sauteed veggies sound good, and I'm sure it would be fine cold if you wrapped it well to hold it together.

This is pretty good! Instead of using the listed condiments (because I didn't have them around, and don't care much for mustard on my sandwiches) I topped this with some homemade mild salsa and it tasted quite nice.
