Surprising Carrot Sandwich

Ingredients (use vegan versions):

    1/2 fresh grated carrot
    2 slices whole wheat bread
    1/2 sprig green onion chopped
    1/2 sprig fresh cilantro chopped
    1 slice tomato
    1 piece romaine lettuce
    1 teaspoon sweet mustard (optional)
    1 tablespoon hummus

Directions:

Serves: 1-2.

Preparation time: 5 minutes.

Spread the sweet mustard on one slice of the vegan bread.  Spead the hummus on the other slice.  Layer the carrot, cilantro, green onion, tomato, and lettuce on the vegan bread and enjoy!  Bread is also good toasted.


I think that this is my new lunch sandwhich!  It sounds much more appealing than soup or anything else I usually eat.

Will somebody please tell me what cilantro is.  Even a botanical name will do.  That way, I can look it up in my country and find our local name for it.  For all I know it could be a common vege or herb.  Thanks Mrs Florence Els

Cilantro is also known as Corriander.

Cilantro is also called fresh coriander.  I don't like it, so I'm going to use parsley instead.  Hope this answers your question!

Cilantro is a colloquial name for the leaves of coriander.  It is used a lot in Indian and Mexican cooking, and might be found fresh in a local Asian market, if you have one.  Its a flavour that people either love or hate; if you love it, you'll miss it if its not there.  This sandwich sounds great so I'm off home to try it!

Cilantro is the common spainsh language name for the herb in Mexico and South Texas.  Its english lanugage common name in the U.S. is Coriander.  The botanical name is family Umbelliferae (other members are carrot and parsley); genus Coriandrum and species sativum.  Typically the seeds are known as coriander and the leaves are known as cilantro or Chinese parsley.  That should help you find the herbal.  Cactus Charlie habitat@electrotex.com

This sandwich is amazing. I don't know why there aren't 5 stars next to it like some of the other recipes. Its really really good. I didn't have any sweet mustard but I did have the regular kind and I added just a tiny bit. 5 stars!!!!!!!!1

Wow! Utterly cool to find someone who'se sandwich tastes are so in line with my own! I love sweet mustard and hummus together. Also, it astounds me that more sandwich shops don't pick up on the sheer deliciousness of shredded carrot as a sandwich topping.  Anyway, here is my own carrot sandwich that I've been making for quite some time:  2 slices whole wheat pumpernickel vegan bread hummus sweet mustard 1 shredded carrot very thinly sliced tart apple (about 1/2 an apple. I like granny smiths, lodis, early macs...I live in apple country Smiley about 1 dozen thinly sliced cucumber rounds some slender bell pepper strips (orange is great, b/c then the whole sandwich is green and orange!) bean sprouts / alfalfa sprouts /etc.  black pepper Fresh, crispy, and delightful! Perfect summer sandwich!

Tongue wow was this fantastic.  i have never tasted such a novel combination in my life.  so easy to prepare too.  i actually used the recipe on here to make cilantro hummus for this, so mine was extra green tasting as well.

Being the poor girl I am, all I had to make this recipe was the bread, carrots, lettuce, and mustard. I actually made a mixture with my food processor with the baby carrots, lettuce, and mustard, and I found that it makes a really excellent sandwich spread. Smiley

This was a pretty mediocre sandwich - nothing special to me... I was looking forward to trying it for some time now - I finally made some hummus - but it just wasn't that great... Now last friday I had a really good open faced sandwich at this trendy little place in Amsterdam - that was a good sandwich - it was on this large flat bread - sort of like ciabatta - they spread the hummus on thick and then they topped it with grilled eggplant and tomato and sprinkled it with chives, salt and pepper... ahhh - so simple - and so sublime... that was special! Roll Eyes
