Roasted Eggplant and Red Pepper Sandwich

Ingredients (use vegan versions):

    bread of your choice, toasted or not
    1 clove garlic (optional)
    1 (1 pound approximately) unpeeled eggplant, cut crosswise into rounds about 1/2 inch thick
    Slices of roasted red bell pepper (see Janines post yesterday for how to roast bell peppers)
    Onion (optional)
    Fresh herbs (basil or whatever - optional)
    sliced soy cheese of your choice (optional)
    Tomato slices (optional)
    FF salad dressing/dijon mustard (optional)

Directions:

Arrange eggplant slices in a single layer on a baking sheet coated with vegetable cooking spray -NOTE- you can slice up an onion and throw it on the same baking sheet if you'd like roasted onions on your sandwich as well.  LIGHTLY spritz the eggplant (and onion) with cooking spray.  Broil 3 inches from heat for 5 minutes; turn eggplant (and onion) over and broil an additional 5 minutes or until lightly browned.

If you like, rub your vegan bread or toast with an unpeeled clove of garlic.  Arrange eggplant, pepper, onion, herbs, tomato, or whatever your favorite sandwich fixings are on the vegan bread.  If you like cheese, place a slice on top of the whole shebang and nuke or broil until cheese melts.  You can drizzle on some FF salad dressing or spread some dijon on the top piece of vegan bread.  Thats it - enjoy!


I think this is a great recipe, I love egg plant so much but never would have thought to put it in a sandwich. Excited about tomorrows lunch though.

Great recipe! I enjoy substituting roasted portobello mushrooms for the cheese--just roast them along with the peppers, but for about half the time.

i had a DEEELICIOUS sandwich just like this at the Museum on Modern Art in new york city! i totally forgot about it until jusy now, so i can't wait to try this recipe. honestly, i think eggplant is bizzarely reminiscent of flayed slugs or something, so i might substitute something... Smiley

great recipe........when i make this sandwich, i use zucchini strips, red pepper and onions. i put them in a pan with olive oil and towards the end i drizzle balsamic vinegar over so that it caramelizes and adds a nice flavor.

These were SOOO good I made them by lightly toasting the bread on one side then rubbing the garlic on it, then spreading a thin layer of cream cheese, over that and sprinkling with basil. then I layered on the eggplant and onion and topped with cheese and broiled a few minutes and spirted with italian sald dressing before serving.  delish! reminds me of quiznos!
