vgrif@optonline.netLentil Sweet Potato SoupIngredients (use vegan versions): 1 lb lentils
1 lb sweet potatoes, peeled and diced
1 cup diced onion (Vidalia if available)
3-4 stalks celery - sliced
32 oz vegetable broth
3 - 4 cups water
(optional - other soup vegetables)
1 tbs+ oil (I use Canola)
organic raw sugar (to taste - 1-3 tbs.)
2 teaspoon salt
basil to taste
Directions:Sauté onions in oil until soft. Add all other ingredients and bring to a boil. Simmer until tender (about an hour). This soup tastes best if left to sit on the stove a couple of hours before serving.
The vegetables tend to disappear in this soup so if you prefer them more firm, add them 1/2 hour after the lentils.
Preparation time: 1 hour+
This soup is excellent! I found it easy to make and delicious. I might try it without sugar as its already sweet enough from the potato. Also carrots are a good addition.

This soup is fantastic! Very simple and the flavor is superb. I didn't use any sugar and didn't miss it. I also found I needed to use a little more liquid, or make sure the simmer was extremely low, in order to make it more like a soup than a stew.

I omitted the celery and added carrots. I agree it was plenty sweet without sugar. Also used red lentils so it was an all-orange soup! And curry... I can't do any soup without curry. =)

This was yummy and super easy. Makes enough for a few days and depending on how much my beau eats on the leftovers, I might try freezing to see how it holds up. I used 2 big sweet potatoes, not sure how much they weighed but maybe I will add another one next time. I also added carrots, and couldnt resist using 1 TBS of sugar. It probably didn't need it it but it wasn't too sweet. Also next time I will use a little extra liquid, at least a cup more, because this was pretty thick. Is this one pound of dried lentils or cooked lentils? I pound of dried beans seems like a lot. Can you let me know if you used dried or canned and how you measured?

Hey vegan1, I used dried lentils. I got em in the bulk section so I just weighed em to approximately 1 lb. It was about 2 cups I guess. The recipe comes out a tad thick, so you can probably get away with using less lentils and then not add any extra liquid. But keep in mind it IS lentil soup, so it is mostly lentils, the other veggies don't add that much bulk to the soup. Let us know how it turns out for ya!

I didn't really like this soup. I thought it lacked flavor. Also, I used 4 cups of broth and 5 cups of water and it still wasn't enough liquid.
