SowellToddLaw@ichange.comAbsolutely Incredible Spicy Sour Soup with GarlicIngredients (use vegan versions): l large can black beans
4 large potatoes
2 heaping teaspoons of minced garlic
1/4 cup
olive oil 2 medium onions
2 carrots, chopped
1 can white kernal corn
1 cup white vinegar
1 teaspoon curry
2 tablespoons hot sauce
1 can chopped tomatoes (or equivalent fresh)
Directions:Cook potatoes in several cups of water until done. Drain and reserve 2 cups of the potato liquid. Drain black beans and reserve liquid. Place black beans and potatos and a small amount of water in a blender and puree. Mix puree and reserved potato liquid and black bean liquid and simmer over low heat. WHile this is simmering, saute onions and garlic in the
olive oil, until lightly brown. Slowly add vinegar and curry to onion/garlic mixture and continue cooking for an additional fifteen minutes. Then, mix onion/vinegar mixture with the potato/black bean mixture and continue simmering. Finally, add carrots, corn, tomatoes, and hot sauce and cook over low heat for an additional 30 to 45 minutes. Guaranteed the best soup you will ever eat!!!
Serves: 8.
Preparation time: 1 1/2 hours.

Made this soup, added celery and put 3/4 of all ingredients, expcept spices, put whole amount of spices. Excellent soup!!

Well, this soup was OK, but definitely not the best soup I've ever had. I found the 1 cup of vinegar too overpowering, even thought I generally like hot & sour soup. I don't think I'd make this again.

Mmm... yes realy gave our taste buds a jolt, I've never tried using vinegar before.

I cut back on the vinegar a little bit, and added a lot of crushed red pepper to make it more hot. The result: very hot and very sour. Its pretty good, but I don't know if I'll make it again or not. This soup turns out sort of creamy and thick from the pureed potatoes. For some reason I had expected something more brothy.
