Soya Croquettes

Ingredients (use vegan versions):

    1 cup dry soya beans
    1 raw grated onion
    2 tablespoon peanut butter
    1/2 cup chopped parsley
    half cup dry brown rice
    half cup grated carrot
    1 cup wholemeal breadcrumbs
    1 teaspoon salt

Directions:

Cook soya beans till tender (I usually use a pressure cooker - after soaking beans overnight).

Mash or pulp soya beans while still hot as they harden if they cool.  Simmer the rice until cooked, add to the rest of the ingredients, mix well.  Form into croquettes, roll in sesame seeds and you can choose to either bake on an oiled oven tray for 25 minutes at 160 degrees centigrade or fry with a little olive oil in a nonstick pan with a lid.  Gently cook both sides.

Serves: 6

Preparation time: 1 hr
