Aduki Bean Burgers

Ingredients (use vegan versions):

    1 can (I prefer canned beans, but if you want you can soak) of Aduki beans
    1 teaspoon of yeast extract
    1 onion
    2 cloves of garlic
    1 slice of bread (in burger, you can have more around :-)
    a little vegetable oil
    a little flour
    salt and pepper

Directions:

Mash half beans in blender or with potato masher (fork if your utensily empoverisheed). Chop onion. Chop garlic. Fry onion and garlic till starts to brown. Add yeast extract. Fry together on low heat. Turn vegan bread into bread crumbs (toaster/microwave then blender or grater). Mix all ingredients bar flour (oil already used. ;-) Form into burgers. Coat with flour. Fry in v. little oil or else they will disolve.

Serves: 2

Preparation time: 30 mins


Is there a substitute for the yeast.  People with candida can't have yeast.

Subs for yeast extract: use nutritional yeast (it doesn't affect candida), or use liquid smoke, or mushroom broth, or Kitchen Bouquet, or just don't use anything -- the burgers come out pretty good without the yeast.

I made these last night with the following changes:
Sauteed the onion and garlic in veg. broth
Added ground cayenne, Chinese 5-spice, and ginger (about 1/4 tsp. each)
Used panko instead of bread crumbs
Omitted the flour and oil
Refrigerated the bean mixture for 30 minutes before making patties
Baked on a nonstick cookie sheet for 10 minutes (375*F), then broiled for 3 minutes on each side until crisp. 
I ended up with 6 thin patties, which would probably also make 4 thick patties. 

I served the 'burgers' on a bed of garlic-infused kale with roasted delicata squash on the side.  Very good!  Thanks for the recipe./

I printed out this recipe for my fiance to make and the end result was lovely!  We have never cooked with aduki beans before and I think this is a nice quick recipe Smiley
