Grapenuts Roast

Ingredients (use vegan versions):

    2 cup Grapenuts cereal
    3 cup nut milk
    2 cup finely chopped celery
    1/2 cup chopped nuts
    1/2 cup chopped onion
    2 tablespoon whole wheat or soy flour, or Ener-G Egg Replacer for 2 eggs
    1-1/4 teaspoon salt
    1 teaspoon sage

Directions:

Combine all ingredients, mix well.  Let stand 20 minutes.  Transfer to large loaf pan or casserole, sprayed with Pam.  Bake uncovered at 350 for 40 minutes or until lightly browned.  Let stand 5 minutes before serving.

Serves: 8

Preparation time: 1 hour, 20 minutes


Could someone please translate Grapenuts cereal into Australian for me ??!

What is nut milk?  I've never heard of it?  Will regular 2% do?

I tried this last night and was surprized that is was pretty good. I am just learning about this stuff so that was not an insult. I have tried some of the store bought meat subs. With not much success. My hubby turned his nose up at it but he ate it.  Kim

Nut milk 1 cup raw cashews and 4 cups water Blend in blender til smooth

Grapenuts is a brand name for a cereal; I don't know what it would be called in Australia.

I tried it and it was, surprisingly good!  Thanks for the recipe!  For those individuals searching for nut milk, there is a recipe submitted for almond milk in the recipe that should work.  I just thought you may want to try it.  I know that because it was submitted by me ;-).

I made this for my family and the taste was wonderful, but the texture was a bit mushy, especially in the middle. Next time, I won't let the Grapenuts soak so long, and I might bake it in a 9x13 pan, instead of a loaf pan, so that more of the roast can become browned.  Great recipe, though!
