Walnut Burgers

Ingredients (use vegan versions):

    2 tablespoon margarine, 2 tablespoon flour, 1/2 teaspoon salt
    2 cup soy milk
    1-1/2 cups toasted bread crumbs
    Ener-G Egg Replacer for 2 eggs
    1/2 cup chopped onion
    1 teaspoon seasoned salt
    1 cup finely chopped walnuts or pecans
    1 cup cooked rice
    1/2 cup chopped olives

Directions:

Blend margarine, flour and salt over low heat.  Stir in milk and cook until thickened; simmer about 2 minutes, stirring constantly.  Remove from heat; add remaining ingredients; mix well; chill.  Form into patties, roll in flour or cracker crumbs, and saute or bake until brown.

Serve in buns, or with tomato sauce or mushroom gravy, if desired.  Makes 12 burgers.

Preparation time: 1 hour


I loved your recipe.  I didn't make it exactly as written.  Howe'ver, it was close.  I had no olives in the house at the time, so I used mushrooms, finely chopped in place of that, and just substituted olive oil for the margarine.  I didn't have enough vegan bread crumbs, so I used oatmeal to make up for the crumbs I didn't have.  I used both pecan meal and walnut crumbs combined.  I left out the rice.  I used raw soymilk from soaked soybeans and just let the milk cook longer.  I found that the soymeal and the milk well cooked did wonderfully as a binder.  I didn't need any Ener-G Egg Replacer as a result.  I'm ever the improvisor and the recipe turned out fabulously!  Thanks.
