Sloppy Vegan

Ingredients (use vegan versions):

    1 package or block of firm tofu
    1 onion
    1 large carrot
    1 small bell pepper (any variety)
    1 stalk celery
    2 cloves garlic
    8 slices of fresh sandwich bread or 4 burger buns
    2-3 tablespoon tangy vegan BBQ sauce
    1 tablespoon lemon juice
    1 tablespoon olive oil
    salt, pepper, oregano (to taste)

Directions:

Serves 4.

Dice vegetables.  Cut tofu into 4 thin slabs and set aside.  Heat oil in skillet.  Saute vegetables for 10 minutes over medium heat.  Stir in BBQ sauce, lemon, and seasonings.  Remove from heat.  If desired, heat tofu in oven or microwave (may also be fried).  Create tasty hot sandwiches by placing a slab of tofu, topped generously with sauted veggies, between slices of vegan bread.

Enjoy!


I tried this,but changed it slightly by crumbling up the tofu and frying it with the onions, etc. It is very versitile, can be eaten in pita pockets or wrapped in tortillas.

I tried this recipe last night, but instead ao tofu, i used portabella mushrooms instead. Wonderful recipe, even my meateating hubby liked it!!!
