Quick, Easy, and Yummy Veggie Sandwich

Ingredients (use vegan versions):

    2 slices of any kind of bread
    cucumber
    tomato
    mayo
    sprouts
    pickle slices (I don't like pickles, but my friend does and she says they're good on this sandwich)
    lettuce

Directions:

Spread mayo on the vegan bread. Slice the cucumber into little circles and put them on one piece of vegan bread. Slice the tomato and put them on the other piece of vegan bread. Put as many sprouts and lettuce as you like on top of the tomatoes and cucumbers. Oh yeah, the pickles...  put them in whenever you want. Put the two pieces of vegan bread together and eat!

If you don't like any paticular ingredient, feel free to replace it with whatever you want.  This is a pretty open-minded sandwich.

If your not going to be eating it for a while, like say your packing it for lunch, keep the tomatoes separate or else it will get soggy.

Enjoy!

Serves: 1 or 2

Preparation time: 10 min.


I eat these all the time because they simply taste great and are very easy and quick to prepare.  What I do is add a few slices of avocado as well and put some mustard on.  Try it., you might like it...

Try adding bell peppers, mushrooms and sliced pepperoncinis. I love them this way. Be careful, though. The more veggies you add, the harder they are to eat!

Also, try adding some cheese.  My favorite is Monterey Jack and Muenster.

try using hummus instead of mayo. Its great, especially with extra garlic-gives great flavor.

This the first sandwich I've had as a vegetarian. It tastes great. Lite but filling with that satisified feeling you don't need to eat until dinner time.

Sliced cucumber is also a good addition. It may sound a little strange, but it tastes great!

If the round cucumber slices keep falling out of the sandwich, cut the cucumber lengthwise into strips. Also, you can substitute the mayo for tofu cream cheese, and add sunflower seeds for some more variety.

sounds yummy, i make a sandwich and (it is a little weird) but i use dairy-free italian dressing on it, green peppers, and sliced up black olives. kinda like a mini sub.

This is a yummy sandwich. If you have problems with soggy-bread due to tomatoes, try toasting the vegan bread...the bread will get less soggy.. also try putting the tomatoes as close to the middle of the sandwich as possible.  mmm.. they're especially good with homemade vegan bread..any kind.
