1 large sweet potato, peeled and sliced 2"
1 large mango, cubed 1"
1/4 cup applesauce
1 tablespoon brown rice syrup
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup vanilla nondairy milk (I use soy)
1. Boil sweet potato for about 10 minutes or until a soft.
2. In a mixing bowl, mash mango and sweet potato together and add the applesauce, brown rice syrup, cinnamon, and nutmeg.
3. Add milk to get to desired consistency. You can serve this as a side dish with baked tofu or with pita as an appetizer.
