8 ginger snaps
1 ripe avocado
4 tablespoons extra virgin olive oil, divided
2 tablespoons pine nuts
1. Mash avocado with 3 tablespoons of the olive oil.
2. Spread the paste on each ginger snap, and then drizzle the remaining oil over the top.
3. Sprinkle pine nuts on top and enjoy.
It sounds too simple to taste nice, but I find this combination is excellent. Would also be quite good for weight gain, I'd imagine, but you'd have to eat more than just 2. Use only the best quality and the flavors really blend to make a very unusual but delicious appetizer.
