1/2 cup olive oil
1/2 cup onion, chopped
1 green bell pepper, chopped
1 yellow squash, chopped
2 cloves garlic, chopped
1/2 cup thawed frozen corn (or fresh)
1 cup mushrooms, chopped
1 cup firm tofu, chopped (I like the White Wave Mexican pack)
1/2 cup water
1/2 (1 1/4 ounce) package taco seasoning (I like Hain)
1. Heat up a skillet. Add olive oil to pan and let it get hot. Put all the veggies and tofu in at the same time. Cook until the veggies are desired tenderness.
2. Add the water and sprinkle taco sesoning into the pan. Stir together and let the mixture thicken a bit.
Serve in either corn or flour tortillas. I also serve mine with either vegetarian refried beans or guacamole.
