1/2 pound vegan sausage or beef (I use Lightlife Gimme Lean)
1 small onion
1/2 teaspoon garlic
oil, as needed
1 teaspoon dried oregano
1 teaspoon basil
1/4 teaspoon dried thyme
1/2 (4 1/2 ounce) jar sliced mushrooms
1/4 cup all purpose flour
1/4 cup vegetable broth
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can green beans
1/4 teaspoon salt
1/8 teaspoon pepper Mashed potatoes:
4 medium potatoes, peeled and chopped
nondairy milk, as needed (I use Rice Dream)
4 tablespoons vegan margarine, melted
salt and pepper, to taste
1. Preheat oven to 375 degrees F. Saute vegan sausage, onion, and garlic in oil until lightly browned. Add oregeno, basil, and thyme. In order, add mushrooms, flour, and vegetable broth.
2. Stir constantly until flour covers sausage. Add tomatoes, green beans, salt, and pepper. Spoon mixture into a casserole dish.
3. For mashed potatoes, boil potatoes for 20 minutes. Drain, and add margarine, milk, salt and pepper. Mash until smooth.
4. Top the meat mixture with the mashed potatoes. Bake for 20 minutes, then broil for 5 minutes. Enjoy!
