1 cup whole wheat flour
2 tablespoons cocoa
1 teaspoon baking powder
1 can fruit slices or 2 whole peaches/pears/etc
1 cup vegan soy milk (coconut milk is also nice)
1 1/2 teaspoons baking soda
50 grams non-hydrogenated vegan margarine
1 cup raw/brown vegan sugar
1 tablespoon vegan maple syrup
sift flour, cocoa and baking powder in a large bowl
melt margerine, vegan sugar and maple syrup in a saucepan and stir until vegan sugar is completely dissolved.
mash the fruit and add to margerine mix.
mix with dry ingredients.
add baking soda to soy milk and then add to previous mix.
bake for 1/2 - 3/4 of an hour at 180 degrees celsius.
