2 large oranges
3-4 medium size yams
1/2 teaspoon sugar
pinch freshly ground ginger
half walnuts or pecans for decoration
Cook yams in 1 cup water on low flame. Remove yams. Mash together with ginger, cinammon, vegan sugar, and salt.
Peel oranges with a knife leaving the white of the orange. Rinse oranges. Cut in halves and remove the center with a grapefruit knife leaving a 1/2 inch bowl from the oranges including white.
Spoon (or even better use a pastry squirter) the yam mixture into the oranges. Place the oranges in a baking pan and bake for 10 minutes at 200 degrees C.
Decorate each half with a pecan or walnut.
