2 sticks non-dairy soy margarine
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 1/2 cups applesauce
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
cinnamon, nutmeg (about 1 teaspoon each)
1/2 teaspoon ginger
3 cups oatmeal
1 cup raisins
Use vegan/organic versions of all ingredients!!
Beat together margarine and vegan sugars. Add applesauce and vanilla.
Combine flour, baking soda, cinnamon, nutmeg and ginger. Stir into vegan sugar mixture. Stir in oats and raisins.
Drop rounded spoonfuls onto cookie sheet (sprayed with non-stick spray). Bake until brown (about 10-12 minutes) at 350 degrees F.
Cool on a wire rack for best consistency.
These cookies tend to be kind of thick but very yummy!
