1 (16 ounce) can pumpkin puree (not pumpkin pie mix)
1 cup orange juice concentrate
1/2 teaspoon pumpkin pie spice
1/4 teaspoon ground cinnamon
2-3 tablespoons instant clear jel (a precooked cornstarch)
1. Combine pumpkin, orange juice concentrate and spices in blender.
2. Blend until smooth and well mixed.
3. While blending, add instant clear jel, 1 tablespoon at a time, until thickened to spreading consistency.
Instant Clear Jel is a pre-cooked cornstarch, it should be available at your health food store, if not, ask for it. It is wonderful stuff. Thickens instantly, without cooking.
