4 - 6 avocados
1/2 - 1 head of garlic
1 lime
4 - 6 Roma tomatoes
1 bunch of cilantro
Cut and peel all of the avocados and tomatoes. Finely mince all the garlic. Cut up the cilantro as finely as possible (It takes more time, but I think its better to take the cilantro leaves off the stems and just use the leaves). Slice lime in half.
Combine everything but the lime in a bowl and mash it up (or stir, whatever suits you and you have the equipment for. I find mashing to be quite cathartic!). Squeeze lime juice into guacamole and stir it up! Eat with chips, burritos, tacos and whatever else sounds terrific!
This is a great recipe for getting that high octane garlic intake. If you fear garlic, this recipe is not for you!
I discovered that simpler was actually better when it comes to guacamole. Other guacamoles that I ate, especially store bought ones, had way too much salt and sour cream in them - the chips that I dip in the guacamole are already salted and the sour cream (or alternative) just makes it taste, well, sour and dilutes the flavor of the star ingredients.
The really wonderful thing about this recipe is that it is all fresh plants -YUM!
