2 tablespoons vegan margarine
2 cups bread cube stuffing
1 (12-ounce) package chicken-style seitan, cut into bite-sized pieces
1/2 cup dried cranberries
1/2 cup fresh parsley, chopped
1/2 onion, minced
1/2 cup chopped walnuts, lightly toasted
salt, to taste
pepper, to taste
3/4 cup vegan mayonnaise
1. Peel oranges and remove as much white pith as possible. Chop into 1/2-inch chunks.
2. Croutons: In a pan, heat margarine over high heat. Add bread cubes; cook until lightly toasted.
3. In a bowl, combine orange chunks, seitan, cranberries, parsley, onion, walnuts, salt, and pepper; mix thoroughly. Add mayonnaise; mix well.
4. Garnish salad with croutons and serve.
